So I started seeing a new primary care doctor recently and she thinks I'm lactose intolerant to a certain degree. I'm honestly not surprised about this revelation because like 90% of Asians are lactose intolerant. My older sister actually developed an intolerance to lactose in her 30s as well. I'm not going to bother getting tested, I researched that, I don't want to spend hours at the doctor's office.

Anyways, she kind of freaked me out when she said you should probably stay away from mac & cheese. I gave her a face. But I love mac & cheese. And then, I got a little bit clever…when it came time to bounce around ideas for my continued partnership with Blue Diamond Almond Breeze Almondmilk, I thought why not make a mac & cheese recipe with almond milk…it can be done, right? I have been trying my hand at baking with and cooking with almond milk so this was exciting for me to try.
Not only can you substitute whole milk for the cream in mac and cheese, but you can also substitute low-fat, fat-free or evaporated milk in the same proportions as cream. Some recipes retain the dish's creaminess by using a few tablespoons of Greek yogurt or even cubes of cooked butternut squash to add a gooey texture.
Also a can of evaporated milk (not the sweetened condensed) does wonderful things in Mac n Cheese as well as mashed potatoes and gratins. I assume the powdered milk adds the same missing flavor and thickening properties to water? To make macaroni or maccheroni(!) with cheese, you need the pasta and a cheesy bechamel sauce. So for the cheesy bechamel, as long as you have flour, butter and-in the absence of milk, something that serves as a milk substitute (e.g water or cream or an admixture of the two)-you could probably make an okay bechamel. I have the regular Kraft Mac & Cheese and I just dumped the noodles in to boil and then remembered that we are out of milk. It only takes 1/4 cup. 'This is the classic baked Mac and Cheese of my childhood. You can add sun-dried tomatoes if you wish, or sometimes I substitute minced garlic for the salt and pepper.
It took a couple of tries and tweaks to get it right but I can yes, it can be done! It's so creamy and cheesy, I love it!
Drafting software for mac. We're big fans of buying blocks of cheese and grating it when we need it. I chose swiss gruyere, parmesan and sharp cheddar for my three cheese macaroni and cheese.
Melt the butter and add the salt and spices.
Then, add flour and create a roux. You want to cook it so the flour gets cooked.
Then, slowly whisk in the Almond Breeze almondmilk, for this recipe, I used the original flavor. Then mix in the cheese.
There you go!
Add the macaroni pasta and mix really well.
And you have cheesy goodness. Enough said. I'm so happy about this…you don't even know! I know some of you are going to ask but I don't really have a problem with most cheeses like cheddars because they don't have a lot of lactose or they are lactose free.
And PS, even Curtis is excited about this recipe! I'm out of town and he texted me a picture of his dinner plate complete with leftover mac & cheese on that plate! Yay!

Three Cheese Macaroni & Cheese Recipe
Ingredients:
Make Mac And Cheese Without Milk
- 1 pound elbow macaroni
- 3 Tablespoons unsalted butter
- 1 teaspoon ground mustard
- 3/4 to 1 teaspoon salt
- 1/4 teaspoon pepper
- a dash of ground nutmeg
- 1/4 cup unbleached all purpose flour
- 2 cups Almond Breeze Almondmilk Original
- 1 1/4 cups freshly grated sharp cheddar cheese
- 3/4 cup freshly grated swiss gruyere cheese
- 3/4 cup freshly grated Parmesan cheese
- salt and pepper to taste
Directions:
- Bring a pot of water with salt added to a boil. Cook pasta according to directions on the package.
- While the water is boiling, melt butter in another pot on medium heat. Add ground mustard, salt, pepper and ground nutmeg and mix in flour. Constantly stir and mix the flour mixture in the pot for about 3 to 4 minutes, creating a roux and cooking the flour.
- Slowly whisk in Almond Breeze Almondmilk, mixing it into the flour mixture carefully. Cook for another 4 to 5 minutes, while whisking the mixture. Add cheese and mix, turn the heat off. Add the drained pasta to the pot with the cheese sauce. Mix together to coat the pasta and serve immediately.
Notes: You can store the leftovers in the refrigerator but when you microwave it, it's not the same consistency as when you first make it and eat it out of the pot. You can also bake it in a baking dish. Curtis loved baking the leftovers in the oven.

Rich and creamy macaroni and cheese made without traditional butter!
Creamy, cheesy mac and cheese – life’s perfect comfort food! I don’t think I know anyone who doesn’t go wonkers for a big, soothing bowl of macaroni and cheese… pasta wrapped up in the creamiest, cheesiest sauce you’ll ever taste.
Macaroni and Cheese is a kid favorite – typically made with butter, flour, milk and shredded cheese, before being stirred into pasta and seasoned with a little salt. Make it on the stovetop, or … mix it up and bake in the oven topped with breadcrumbs – both are just as fabulous!
But. you have a problem.
As you reach in the fridge you realize you are out of butter – even worse, you are out of heavy cream… so making more butter is truly not an option.
While most people might toss the butter aside in favor of healthier options, butter and raw full fat milk are actually both healthy fats that are so critical to our body. You’ll be happy to know though that you can still make the creamiest of macaroni and cheese despite not having butter. So creamy in fact, your kids may not even realize that you were out of butter in the first place.
Start by boiling your favorite pasta – wheat, rice, gluten-free or even regular macaroni. As the pasta is cooking, stir the flour into the milk on low heat, and whisk until combined. On low-medium, continue to whisk until the mixture has thickened, then toss in the shredded cheese, salt and pepper.
Once the cheese has melted into the sauce, stir in the drained pasta and season with additional salt and pepper, ground mustard or a little cayenne pepper.
This mac and cheese is one of my favorite recipes- enjoy it scooped into bowls, as a side next to grilled chicken or sloppy joes, or on it’s own for your next Meatless Monday!
Rich and Creamy Macaroni and Cheese without Butter
Rich and creamy macaroni and cheese made without traditional butter!
Ingredients
- 12-16 oz pasta
- 3 C. milk, full fat (+ more if desired)
- 4 Tbsp all purpose flour
- 1 C. shredded cheddar cheese
- 1 tsp salt
- 1/4 tsp pepper
- optional: 1/2 tsp cayenne pepper, chili powder or ground mustard
Instructions
Substitute Milk For Water In Mac And Cheese
- In a medium pot, cook the pasta just until firm - drain in a colander and set aside.
- In the same medium pot, combine 2 C. of milk with the flour over low/medium heat and whisk until there are no lumps. Slowly add the remaining cup of milk, whisking continually to avoid the mixture sticking to the bottom of the pan. The mixture should thicken over the next 3-5 minutes. Feel free to add up to a 1/2 C. more milk if desired.
- As the mixture starts to thicken, add the cheese, salt and pepper and continue to stir over low heat until the cheese is melted.
- Remove from the heat and stir into pasta, season with additional salt and pepper as needed.
Notes
Feel free to substitute different varieties of milk, though we have only used full fat, raw milk and cannot vouch for the success of skim, 1%, 2% or even non-dairy. Use organic ingredients whenever possible.
